I'm trying to figure out if this specific power supply on eBay will work for my setup, which includes an AMD Ryzen 5 3600 processor, a GTX 1660 Super graphics card, and a B550 motherboard. Honestly, a 500W power supply is more than enough for your build, but the one you linked seems sketchy. It's questionable quality and likely not truly a 500W unit based on its specs. The 12V rail only has 18A of output, which means it can deliver just 216W—way below what you'd want. I'd recommend looking for a more reputable brand and definitely something that's at least 80 Plus rated to avoid potential issues.
