I'm planning to run a Cat6 Ethernet cable from my unfinished laundry room into the ceiling, since it's easily accessible. I'll be threading it through holes where the coaxial cable is already running (between the studs) and then pulling it through a pre-cut hole in the wall to install a wall plate for the connection. I have a 50ft Ethernet cable, a wall plate, and some fish tape. Does my plan sound okay? Any suggestions or tips would be appreciated!

Just make sure you're consistent with your color coding on both ends! Follow this order: Orange White, Orange, Blue, White Green, Green, White Blue, Brown, and Brown White. If you have the right tools, you should be good to go!
It sounds like you’re on the right track! Just a tip: make sure your Cat6 cable is solid copper rather than stranded, and it should be CM or CMR rated based on where you're running it. Don’t forget to use the right punchdown jacks and have some basic termination tools like a stripper and a punch. If you're using a fast jack wall plate, they can work, but a punchdown jack is typically more reliable.
One thing to think about is leaving a little extra cable at both ends—about a foot or so. This gives you a service loop, which is great in case you ever need to clip and repunch due to a damaged jack. Plus, it makes connecting everything easier since you can get the jack away from the wall to work on.
