I have an old desktop Mac that work gave me a few years ago, and it's been sitting in my closet turned off for a while. I got a new computer from them and no one's asked for the old one back. I'm pretty sure they've forgotten about it. I'm thinking of doing a factory reset to use it for personal stuff. The question is, will my work find out if I do that? Is there any way they can be alerted? Also, I've got some programs on there like ConnectWise Control—how can I check if it's being monitored?

It's tough to say for sure. If the Mac is registered as a managed device, it might send alerts back to your company's IT department when it connects to the internet. But honestly, if it’s a Mac, a lot of companies don’t set up proper management systems for them, so your chances of being tracked might be slim.
I see your point, but Apple Business Manager makes it easier for companies to manage Mac devices. They could definitely have it set up.
