I'm considering upgrading to a 50 series GPU and I want to use white sleeved extension cables to match my build. However, my PSU, a Cooler Master MWE 80+ Gold V2, doesn't have a native 50 series cable. I'm wondering if I can use the existing PCIe cables from my RTX 2060 with an adapter like the one I found on Amazon. The adapter seems to be designed for 30-40 series GPUs, so I'm looking for some advice on whether this would work or if I should choose another option instead!

Yes, technically they are compatible, but I personally wouldn’t risk it. The 12VHPWR connector has had reliability issues. I’d recommend sticking with the cables that come with your PSU to minimize any potential risks.
