I've been experiencing a lot of problems with my computer lately, including crashes, shutdowns, and Blue Screen of Death (BSOD) errors. It started off with longer boot times, which I didn't think much of at first, but then it escalated. The first major issue I noticed was game crashes while playing, which ultimately forced me to reset the PC. I monitor my temperatures closely, and they didn't seem too high, as I have fan curves set for both my CPU and GPU.
Things got worse when I learned the PC would shut down while in sleep mode or if I left it alone for a while. I got a BSOD during my troubleshooting that said 'WHEA Uncorrectable Error,' leading me to suspect possible issues with my boot drive. After reseating my NVME SSD, I was able to boot normally again, but the shutdowns returned after a short session. Now, I'm facing clicking sounds during booting, and I'd have to reconnect the PSU to get it to boot at all.
I did a Memtest, which showed no RAM errors, and ran OCCT for testing my power, but it shut down during the power test after 11 minutes. Everything else passed without issue. With my experience so far, I'm leaning towards a PSU, motherboard, or GPU problem, and I've already updated all drivers and BIOS. I even have warranty coverage for the PSU and GPU. Any suggestions on further tests I could conduct to pinpoint this issue?

Sounds like your PSU might be underpowered for your 3070, especially if it's consistently shutting down under load. It may not have caused issues before, but as hardware ages, it can struggle to deliver peak power. If the specs say you should have more wattage, it could definitely be the culprit.
It’s interesting that you've been able to run your system fine for years, but maybe the 3070's demands are just too high now for the SF600, especially in peak conditions. I'd recommend checking the wattage output under heavy load. If it dips significantly, a new PSU may be in order.
