How Can I Clean Up My Phone and iPad Without Losing Important Stuff?

I'm really overwhelmed with my phone and iPad. I have a new MacBook but I didn't sync it to my phone because it's a total mess, filled with apps I haven't used in ages and thousands of pictures. I'm looking to start fresh—ideally deleting most of the apps without having to do it one by one. I also want to keep my pictures and notes but store them somewhere other than my phone. If possible, I'd like to retain my passwords and Apple Pay info too, but that's not a dealbreaker. Any suggestions for a simple way to do this?

For your pictures, plug your phone into your MacBook and use Image Capture to save them to your computer. It’s a straightforward way to clear out your phone. As for notes, you can sync those through iCloud or use other services in your settings to keep them safe.
