I've got a single SSD, so there won't be any lane sharing issues. Would it be fine to use the M2_2 slot instead of taking out my GPU to access M2_1?

Yeah, using the M2_2 slot should work just fine! But just to be safe, it's a good idea to check your motherboard manual to see if there are any specific limitations with that slot.
It depends on your motherboard. The M2_1 slot, being closer to the CPU, might have slightly better performance due to a shorter lane length. But for a single SSD, you should be okay with M2_2 too!
