I just bought a 3070 Ti for $400 and I'm looking for some advice on what CPU to pair it with. I want to game at 1440p, playing titles like Minecraft, Fortnite, and Sea Of Thieves. Any recommendations?

If you're open to buying new, CPUs like the 9600X or 9700X are solid choices. They’ll handle gaming really well at 1440p. I think the 9600X might suit you best since you're already considering it!
You might also want to check out the cheapest AM5 CPUs available, either from the 7000 or 9000 series. I’ve heard some not-so-great things about the 8000 series, so maybe steer clear of that one.
