I have about $2,000 USD available to upgrade my gaming PC and would like to keep it performing well for several more years. My priority is consistent performance rather than maximum visual quality, ideally around 60–120 FPS depending on the game. Which parts should I replace, and which can remain useful?

The biggest immediate improvement will probably come from the graphics card. Your 10700K can still perform well, so you could keep the motherboard, CPU, memory, and power supply for now and upgrade to something around an RX 9070 XT. However, some CPU-heavy games will still fall below 120 FPS, and no system can guarantee that frame rate in every game. Your 750W supply may be adequate, but check the graphics card manufacturer's recommendation and the unit's age before reusing it.
For a new build on this budget, I would move to an AM5 platform with an X3D processor, 32GB of DDR5-6000 memory, and a Radeon RX 9070 XT. That gives you a much stronger gaming foundation and leaves some room in the budget. A faster X3D chip is an option if you are willing to spend more for roughly a 10–15% improvement, but it is not as good a value. Check current CPU-and-motherboard bundle pricing as well.
A quality NVMe SSD would be a worthwhile secondary upgrade because the CS900 is a basic SATA drive. Use the NVMe drive for Windows and frequently used applications, while keeping the existing SSD for games and general storage. It will not dramatically increase average FPS, but it can improve load times and responsiveness.
Before replacing everything, make sure the current system is configured properly. Update the motherboard firmware, enable the memory's XMP profile, monitor CPU and GPU temperatures, and tune the graphics settings for stable frame times rather than peak averages. The 6700 XT is still capable at 1080p and 1440p, so you may find that only the graphics card needs upgrading right now.
