I've got a three-year-old PC with an AIO cooler, and after applying new thermal paste, it ran fine for about a week. Now it's overheating again. What could be going wrong? If the AIO cooler is malfunctioning, why did the thermal paste fix the issue temporarily?

It sounds like the AIO pump might have failed if your PC won’t even start long enough for you to check temperatures. That’s like having no cooler at all.
Have you had a chance to check the temperatures when idle or under load? Knowing those numbers could really help pinpoint the problem. If it’s not booting up long enough to check, then that’s a hint things might be pretty bad.
When you say it's overheating, what exactly are you experiencing? For AMD CPUs, it's common to push close to 95°C, but for most setups, I’d recommend keeping it under 60°C while gaming. If your graphics settings are too high, it could be stressing the CPU too much. You might want to try raising graphics settings instead to take some load off the CPU.
I was gaming and it dropped from 200 fps to 5, then the system froze. Now, when I try to turn it on, I just get a BIOS screen saying my CPU is overheating.
