I'm considering upgrading my RX 6800 (non-XT) to an RTX 5070 Ti, but I'm unsure if it's worth the cost. I'm mainly gaming at 1440p with a 7800x3d CPU. Has anyone made a similar upgrade and noticed a significant performance boost?

You probably won’t see a huge difference. If you can wait, consider saving for something like a 5080 instead.
For reference, the RX 6800 (non-XT) is roughly on par with the 7700 XT. You’ll definitely see some improvement, but whether it’s worth the $750 price tag is up to you.
I'd suggest looking at the 9070 XT instead of the 5070 Ti. Just a heads up, Nvidia's drivers have been pretty buggy lately compared to AMD's.
