My main concern is transferring around 60 GB of family photos from the iPhone 8 to the new one, but I can't use iCloud since I don't have enough storage and I'm not keen on paying for more. As both charging ports are broken, I'm wondering if I could break open my iPhone 8 to access the internal storage and retrieve my photos. Any tech-savvy gurus out there that can help me out?

You could use the Google Photos app to back up 15GB for free. Just set up another Google account for more storage if needed. Alternatively, if you know someone with a working phone, you could airdrop your photos to them, then transfer to your computer via USB.
Just pay a bit for iCloud storage, transfer your photos over, and you can cancel the service after! It’s a quick and easy solution.
Unfortunately, opening up your iPhone to get the internal storage out won't work. The repair costs for data retrieval usually far exceed the $20 iCloud upgrade, often ranging from $200 to $1000. Honestly, it might be worth considering that temporary cloud storage instead.
Have you considered repairing the charging ports? That way you can directly transfer your data without having to dismantle anything.
Actually, it's not even $20 for that iCloud upgrade. It’s usually just a couple of bucks for 200GB.
