I'm currently using an RM1000e power supply, which has one available 8-pin connector that splits into two 6+2s. I'm planning to connect this to the 2 or 3 8-pin slots on the 12VHPWR connector of the 5080. My question is: will this configuration provide enough power until I can get a new PSU that has the native 12VHPWR cable from Corsair?

I’m guessing you want to connect only two out of the three required 150W PCIe 6+2 connectors to your power adapter? Honestly, that's not a good idea. You really need to ensure you're providing the full power needed for the setup to avoid any potential issues.
Make sure to check if the cable you are using is compatible with your PSU. You can view it on Corsair’s website for the specifics, especially regarding the 12VHPWR cable options.
