To get started, enable the EXPO profile (the equivalent of XMP from your previous setup) along with PBO for your CPU. These settings will automatically manage RAM and CPU speeds without voiding your warranty.
What are your main goals for overclocking? If it's just for gaming, the 9800X3D should be fine as it won't bottleneck even high-end GPUs.
UEFI has been around for a while now, with AMD using EXPO for their AM5 platform and DOCP for AM4, while Intel sticks with XMP. However, if you're not selling this rig, there's really no need to overclock—default boosts should suffice.
