However, I'm worried that my current CPU, the Intel Core i9-12900K, might bottleneck the performance of the RTX 5070 Ti, especially with the more demanding games coming out. Here's my setup:

I’m running a 12900K with a 5070 Ti as well, and performance has been solid for me. I think your setup, with that DDR5 RAM, should handle things pretty well. Just don't expect to fully max out your refresh rate on high settings in the newest games, though.
You've already got the new GPU, so just jump into some games and keep an eye on your GPU usage. If it drops below 90%, then your CPU might be the bottleneck. But honestly, don't sweat it unless you're really not getting the performance you want. A CPU bottleneck isn't usually a major issue unless it's affecting your gameplay satisfaction.
