Why is Apple Pay using my main email instead of my Apple ID?

I'm having a bit of a problem with Apple Pay. Whenever I use it, the order notifications come to my main email address instead of my Apple ID email. It's not just a forwarded message; it's addressed directly to my main email, which they shouldn't have access to. I really want to know how to fix this issue so that my main email isn't leaked when I use Apple Pay.

You can find the email setting in Settings > Wallet & Apple Pay > Email (look under Transaction Defaults). Some merchants require an email to process the order, so it's worth checking what email is linked there.

It’s the iCloud email that's already set there. I’ve double-checked it. That's why it's confusing that I'm still getting notifications on my main email.
