I'm not very knowledgeable about PC hardware, but I'm wondering if having 16GB of VRAM is only beneficial for AAA games, especially when gaming at 2K resolution. I usually play Counter-Strike 2 at 1280x960 with a 4:3 stretched resolution, so would an 8GB VRAM GPU be sufficient for me?

No need for 16GB here. An 8GB card is good for CS2, especially at your resolution. Just focus on a decent CPU, and you'll be good to go!
