The manual confirms that using both M.2 slots won't reduce the speed of m.2_1 or the GPU bandwidth while populating m.2_2. So, you should be good to go! Enjoy your setup!
From what I see in the manual, it doesn't mention any shared PCIe lanes between the M.2 slots and the GPU, so you're in the clear! Adding two M.2 SSDs shouldn't impact your graphics card's performance at all.
