I'm trying to put together a gaming PC that can handle 1440p gaming on max settings and maybe even work for 4K gaming at lower settings. My budget was around €1500, but my current build totals up to €1600. I'm okay with the extra cost since the most expensive part is the 9070xt, which is priced at €690. Are you getting a new monitor with this build? If so, what are you planning on using? It might impact what you need for your GPU.
I think you might want to reconsider your GPU choice. For 1440p, a Ryzen 5 7600x with a less power-hungry graphics card could do just fine and save you some cash. You really don’t need the high-end GPU unless you're dead set on maxing out settings everywhere.

If you need to balance productivity and gaming, I recommend looking at an Intel 265k with a B580 graphics card. It performs really well for 1440p, and you could save a lot since the B580 is much cheaper than the 9070xt.
If you're looking to cut costs, consider a non-modular PSU and a less expensive case. It won't affect performance but might save you some cash which can be better spent elsewhere.
