I'm worried about what information he might have had access to during that time. Could he have used his laptop with my phone even when it wasn't operational? I already canceled the SIM card today, but I'm anxious about my private information and photos, especially since this person has stalked me before. I'm unsure about the capabilities he might have had or what could have been accessed, so any help would be appreciated!

The SIM card mainly holds your cellular account info and doesn't store your photos or texts directly. Those are typically in the cloud if you have backups with Google or Apple. So, if he didn't have access to those accounts, he likely couldn't browse through your personal files.
If he didn’t have your login info, he shouldn't have been able to access your texts or photos. Just make sure you've changed any passwords just to be safe.
But he claims to have looked through my phone! I mean, is it possible he accessed anything else, like texts or photos, while he had it?
