I'm thinking about picking up an older Intel-based MacBook Air from around 2020 to install Ubuntu LTS on it. My main goal is to learn how to use Linux and Ubuntu, and I'm wondering if this is a good idea or if I should consider other options instead.

If you're just looking to learn Linux, there are definitely cheaper and better alternatives. A business Windows laptop from a brand like Dell or Lenovo is generally more compatible with Linux and might save you some cash, too.
Honestly, I wouldn't recommend getting an Intel MacBook for Linux. They're not the best choice compared to options like a ThinkPad or other business laptops. The thermal performance on MacBooks is pretty poor compared to dedicated business-grade laptops, which can handle Linux much better.
Keep in mind that the 2020 Intel MacBook might not be worth the price unless you really want that particular model. In the end, newer M1 MacBooks can run Linux pretty well and may just give you better value for your money.
