Is it possible that I'm not giving it enough time to sync properly? I know that a difference of up to 1 second is usually acceptable, but I'm starting to wonder if I should consider syncing methods like 'wave' atomic time instead. Also, I'm thinking of setting up a second router to redirect pool.ntp.org to time.nist.gov, but I'm not sure if that's necessary.

It's unlikely that the servers themselves are slow. You can check out the NTP Pool website to see the status of their servers. Most Android devices actually connect to Google's NTP servers, like time.android.com, instead of pool.ntp.org directly. Just to be safe, you might want to check your device's NTP server settings and see if it's set correctly.
Yeah, I've noticed the same issue with certain smart clocks. It seems like they don't sync well after being on for a while. Maybe those Lenovo Smart Clock 2s have their own quirks.
