I'm putting together my first PC build and I'd love some feedback! I was wondering if I've gone overboard with the power supply unit (PSU). I picked up the RAM from Walmart for $150 because all the other prices seemed way too high. Also, just to add, I scored the 5070 on a pre-Black Friday deal for $489. Here's the list of parts I used: https://pcpartpicker.com/list/xD6HwY

Your PSU looks good; it's alright for future upgrades. You can drop it to 750 or 800 watts if you want to save some cash, but if you're not in a hurry, sticking to what you have is fine. By the way, I love the case you're using—it's great! Just a thought: you might want to consider an x870 motherboard for better performance, but it's not a must.
The PSU is perfectly fine as it is! You probably won’t save much by downgrading. Instead, I’d suggest you invest a bit more into a better GPU, like the 9070XT or the 5070Ti. You may also want to look at downgrading your CPU to the 7800X3D for a good balance—it'll still be plenty powerful.
If you can snag the 9070XT for just a bit less, it’d be a better option compared to what you have. Just keep in mind the performance gains!
