I'm trying to figure out how to boost the storage on my iPhone 12. I've already cleared the cache and cleaned up my camera roll to just 276 photos and one video. Everything backs up to Google Photos, and I have only fourteen apps installed. Any suggestions?

You might want to consider using cloud storage services for additional space, or USB-C external hard drives if that would work for you. Cloud services like iCloud or Google Drive are great for offloading photos and videos.
