I'm considering using the Antec HCG 850W power supply for my new build which includes a Ryzen 7700 processor, an ASUS TUF Gaming B650-E motherboard, and a 9060 XT 16GB graphics card. I'm also looking at the CoolerMaster 850W V850 Gold Fully Modular as an alternative. Would the Antec HCG be a solid choice for this setup?

850W is actually more than enough power for your setup. You should be good with the Antec HCG for those components!
Just a quick question: how old is the Antec HCG unit you're looking at?
I think it's from 2018.
