Need Help With My PC Build for Gaming and Engineering

Hey everyone! I'm putting together a PC mainly for gaming, and I'll also be doing some light 3D work and AI projects since I'm studying engineering. Here's what I have in mind for my build: Ryzen 5 7600, RTX 5060 Ti 8GB, 32GB Corsair Vengeance RAM CL30 6000 MHz, MSI B840 Gaming Plus Wi-Fi motherboard, and an Asus Prime 750 80+ Gold power supply. My main games are Valorant and Fortnite, plus maybe some older AAA titles and FIFA.

I'm wondering if it's worth it to splurge on the 16GB GPU version? Also, do you have any suggestions for parts I should change or upgrade, particularly the CPU and motherboard? I'm feeling a bit overwhelmed and just want to make sure I don't regret my choices later. Thanks a ton for any advice!
