Need Help Choosing the Right Monitor for Gaming and Work

I'm in the middle of upgrading my PC with a 5070 Ti and a 7800X3D, and I'm feeling overwhelmed trying to pick out a monitor. I primarily game, especially RPGs and open-world titles, but I also do some work and video editing. I'm considering getting two 27" monitors and ideally want at least QHD resolution. Any recommendations would be super helpful!
