I'm planning to build a PC for Christmas and I'm considering the i5-12600KF for a setup aimed at hitting max FPS at 1080p, with DDR4 RAM because of the crazy prices for DDR5. What GPU would pair well with this CPU? Will a 5070 be too much for it? Thanks for any help!

Honestly, you might not even need that RTX 5070. It might be overkill for 1080p gaming. You could save some cash and go for the RX 9060 XT 16GB, which is about $150 cheaper and will run most games on high settings without a problem.
You can technically use any GPU with the 12600KF; however, there will be some level of bottlenecking with every GPU. If you're looking for the best performance out there, I hear the 5090 is the way to go!
While the 12th gen paired with DDR4 is a step down in speed compared to DDR5, it still can perform pretty well depending on the game. Just keep in mind, you might experience some bottlenecking depending on your specific titles.
