I'm currently using Pop!_OS and I'm curious about which Linux distributions work best with Nvidia drivers regarding stability and performance. Any recommendations?

If you're gaming with a 20 series card or newer, you might want to check out Nobara. It's tailored for gamers and generally works very well with Nvidia graphics.
Pop!_OS is great for Nvidia users, but you might also try Linux Mint, MX Linux, or Zorin OS. If you’ve got a newer machine, CachyOS, EndeavourOS, and Ultramarine Linux could be solid options as well!
