I'm considering an upgrade for my VR gaming setup. Currently, I have a 750-watt power supply, an AMD Radeon RX 6700 XT graphics card, an Intel core i5-12600KF processor, and 32GB of RAM. I'm thinking about switching to an RTX 5070 Ti. Will my power supply be sufficient for this upgrade, and how much of a performance boost can I expect?

There's a significant jump in performance between the RTX 5070 Ti and the 6700 XT. In various benchmarks, the 5070 Ti performs about 50% better at 1080P Ultra settings and over 70% at 1440P Ultra. However, at 1080P with medium settings, your CPU might hold you back a bit. Also, keep in mind that it's crucial to ensure your PSU is up to par—make sure it's a quality model, especially one made post-2023. Since yours is from 2021, you should be fine!
Your 750-watt PSU should handle the RTX 5070 Ti well, provided you have the right cables. The 6700 XT uses two 9-pin PCI-E cables, while the 5070 Ti requires three.
