I recently purchased an NVIDIA GeForce RTX 5080 for €1019. I'm wondering if this is a reasonable price or if I've overpaid for it. What do you all think?

In my opinion, that's a solid deal right now! I assume you bought it from a reliable retailer? These cards can be a bit noisy, but the 5080 is still a great choice. If you're worried about the noise or temps, you can usually undervolt it. I've got the Ventus OC Plus myself, and it works pretty well!
