I'm planning to upgrade my setup with a Ryzen 5 7600X and a 5070 Ti. I'm mainly going to be playing story-driven games like Red Dead Redemption 2, The Last of Us, and Resident Evil 4 at 1440p. Will my CPU be able to keep up or is there a risk of bottlenecking?

LOL, bottlenecking is often overhyped! I run a strong GPU with a mid-range CPU and it works beautifully. If your CPU holds back a bit, who cares if it’s still performing well enough? Just enjoy the gaming!
