I wanted to know if connecting my second monitor to the motherboard instead of the GPU will help improve performance when I'm almost maxing out my GPU while playing games. Would it make a difference if I use that second monitor just for watching videos?

Nope, it won't help. Adding a second monitor will just give your GPU more to do, which is the opposite of what you're looking for when it's already under stress.
