I'm currently using a Ryzen 9 9950x paired with an RTX 3070, which has been okay for gaming, especially COD. However, I'm thinking ahead since I have a new monitor on the way and I want to play more demanding games. I've been eyeing the RTX 5070 Ti because I prefer at least 16 GB of VRAM, but I'm also considering AMD options like the 7900 XT and 9070 XT. Any advice on which GPU would best suit my needs?

Both the RTX 5070 Ti and 9070 XT are good options if you're playing at 1080p or higher. If you find one on sale, grab it! But keep in mind, if the prices are similar, it really comes down to your preference between AMD and Nvidia.
