I recently switched my PC's Nvidia settings from 'performance mode' to 'on-demand' and now I'm stuck with a black screen after the Mint logo appears during boot. I've tried pressing escape but it doesn't show any options, just stays black. Any ideas on how to get out of this situation?

It sounds like a GPU issue, especially if you've been messing with overclocking or undervolting. I had a similar problem when I pushed my settings too far and then tried power-saving mode. It's always a good idea to reset those settings if you're having trouble getting to the login screen.
If you can, try reverting to a snapshot from before the change. That usually helps if you're unable to boot in normally. But if you haven't made a snapshot, you might be learning a tough lesson here!
