Consider Morpheus by HPE as well. It could be a solution to look into.
From my chats with a hardware vendor, it looks like around 50% of users are still on VMware until they upgrade their hardware. About 35% are moving to Hyper-V or Azure, and the rest are diversifying with Nutanix and others. Proxmox seems popular in smaller businesses, but larger enterprises don't typically use it.
Have you considered Microsoft Hyper-V? It's a popular option out there.
What about Azure Local? Is it considered a good choice?
Your main options seem to be Proxmox, Nutanix, Hyper-V, and XCP-ng. Each has its own strengths.
We switched to Proxmox and haven't had any complaints at all. It's been solid for our needs.
I'd recommend picking 3 or 4 options. There's no one-size-fits-all solution. Nutanix Acropolis is strong but may not match Hyper-V's maturity and Microsoft support, while Proxmox has a bit of a tricky conversion process.

How easy is it to migrate to Morpheus?
