I'm building a new PC and I'm trying to decide between the Ryzen 7600X3D and the 7800X3D. The 7800X3D is €50 more expensive than the 7600X3D and €110 more than the 7500X3D. Given that I mostly play games at 1080p and I plan to pair it with an RX 7800 XT, is the price difference worth it?

It's really up to you! If that €50-€110 difference matters in your budget, keep in mind that all three CPUs are pretty similar in performance, especially with the RX 7800 XT. You might see only about a 10% difference in many games.
If you can swing the extra €50, I’d say go for the 7800X3D. It's a small price to pay for a noticeable gain in performance, but don't stress about it too much if you're set on the 7600X3D.
If you're on a budget, the 7500X3D is a solid choice. But I've heard good things about the 7800X3D if you're willing to spend a bit more and can find it!
I wish I could get the 7500X3D but the vendor I’m buying from doesn't have it! I'll probably just order it myself.

That's true, the difference matters but since the 7600 is the only option available right now, going for the 7600X3D with just a €50 jump seems manageable after spending on RAM, GPU, and a new case.
