I'm considering building a second PC using my old parts but I'm torn between buying a budget AM4 motherboard for the 2600 or upgrading my existing motherboard for better expansion options. I think having extra M.2 and PCIe slots would be beneficial. However, I'm worried that I might regret investing in a new motherboard, especially since I contemplated waiting for the AM5. My 5800X3D is still performing well with my RTX 5080, but I'm uncertain how long it will last before I need another upgrade. Plus, the motherboard market seems a bit unpredictable right now due to the impact of AI on various components. Any suggestions?

You might want to check out the cheapest AM4 boards on PC Part Picker to see what fits your needs. If you're building a second PC, do you have extra RAM and storage for it? Prices for RAM and SSDs are pretty high right now, so keep that in mind.
There's actually a surplus of motherboards available right now, though prices can fluctuate a lot. It's wise to hold off for a bit and wait for a good deal. If you're thinking of a new board, maybe consider a used one for your secondary rig or go for a B550 that offers better connectivity for your main build.
If you're mainly looking for extra M.2 slots, weigh that against using a PCIe adapter. As long as the new motherboard is comparable in quality to your current one, you should be fine.
