I'm looking for recommendations on which CPU would work best with an NVIDIA 5060 Ti. I hear AM5 is the way to go, but I'm open to options. Any suggestions?

You definitely want to go with an AM5 CPU. Pretty much any of them will do, but avoid the R5-8400F and R5-8500G if you can. They're decent, but not the best options. The R5-7500F or even the older R5-5600 on AM4 would pair really well with the 5060 Ti.
If you're debating between the 7600x and the 9600x, I voted for the 9600x mainly due to its lower TDP. It's a powerful processor and fits nicely with the 5060 Ti!

Just out of curiosity, why does my RAM show as Ryzen 9000? Any insights on that?

Yeah, the R5-7500F is a solid choice and gives you a good balance with the GPU! Definitely a better pick than those lower-tier ones.
