I've noticed that my Google account is still linked to my mom's phone. Whenever I save a new contact on my iPhone, it appears on her Android too, and she can even edit my contacts, which shows up on my phone. I suspect it's related to the Google account we set up when I was younger since I still use it as my main email. Is there a way to prevent my contacts from syncing to her device?

Google does have contact syncing options. Make sure to check the settings on your account, and you might find a way to manage what syncs and what doesn't.
It sounds like she needs to break whatever connection she has with your account. If you create a new account, you might lose access to Google Play purchases or cloud storage, so be careful with that. It's better to log her out of your account and change the password for safety.
You might be able to log her out remotely if she's still signed in to your Google account. Check Google’s support page on managing devices to see if that helps.
If she's not willing to log out, you could consider changing your Google account password. This way, she'll be signed out on her device, and she won’t have access to your emails or contacts anymore.
The easiest solution is for your mom to sign out of your Google account on her phone. If she's logged into your account, that will definitely cause the contact syncing issue to happen.
