I'm trying to decide whether to go with a 256GB NVMe SSD for my Windows installation and just use an internal hard drive for my games, or if I should just invest in a 1TB NVMe SSD instead. What do you think?

I'd recommend using an SSD for your games. You really notice the difference in load times. My setup has a 512GB NVMe for the OS and games, plus a bigger HDD for all the other stuff.
HDDs are okay for older or smaller games, but for any recent titles over 50GB, they'll really struggle. You need an SSD to handle that demand.
Honestly, once you try an SSD, you won't want to go back to a hard drive. A 512GB SSD can manage modern games much better than an HDD. Plus, waiting for SSD prices to drop could be worth it.
An HDD is fine for basic file storage like music and photos, but for anything else, especially games, you're going to want flash storage. The speed difference is huge.
If you're playing any modern games, you definitely want an SSD. Hard drives just can't keep up and will cause games to stutter during gameplay.
