I'm trying to put together a budget PC and have about $200 AUD (around $130 USD) to spend on used parts. I'm specifically looking at the RX570 8GB and the RX580 graphics cards. How big is the performance difference between the two? I'll be playing games like Red Dead Redemption 2 and No Man's Sky, so I'm curious about which one would be the better option for gaming.

Honestly, for that budget, you might consider looking into a whole different setup! If you can score an older LGA 2011 or 2011-3 system, like the HP Z620 or similar, you could get a solid build. I got good deals on my parts, and you might be able to find them cheap too. If you can swing it, look for an RX5700 instead; the RX580 is decent, but it's starting to show its age.
I'd definitely go for the RX580 if you can get it! Just double-check that it's the 8GB version and not the 2048 stream processors (sp) model, because if it's that one or the 4GB variant, the RX570 would be the better pick for you. But in general, the RX580 is a stronger card for gaming.

If you have to choose between those two, the RX580 is the superior option. Although keep in mind, neither is the best choice nowadays. You could do better with an 8GB RX570 than a 4GB RX580, but seriously aiming for the 8GB RX580 is the way to go if you can find it.
It refers to the number of stream processors in the GPU. More sp usually means better performance!
