Looking to Build a New Gaming PC with a $2000 Budget

Hey everyone! I'm in the market for a new gaming PC since my current system is a 7-year-old i7 with a GTX 1660 Ti, and it's really struggling to keep up. I've never built a rig before and have always gone for prebuilt systems, but I'm eager to learn and set myself up for future upgrades. My main gaming monitor is a S2419HGF running at 144Hz, and I also have two additional monitors for Discord and browsing, although they're pretty low quality. I'd like my new PC to handle some gaming as well as a bit of AI image processing. Here's what I'm looking for:

- A fast boot drive
- At least a 1TB SSD for games
- 32GB of RAM
- Support for three screens
- Plenty of USB ports
- Aesthetics in white (RGB is fine, but not a requirement)
- Air-cooled system, no liquid cooling

I'm thinking of sticking with Intel since I'm familiar with it, and I'm hoping for a powerful GPU to avoid my current issues. I'm unsure about what GPU to choose, and whether I should get another i7 or something different. Overall, I have about $2000 to spend, and I'd appreciate any help or suggestions you can share.
