I'm putting together my first PC with a Ryzen 7 7800X3D, RTX 5080, two NVMe SSDs, and a Super Flower Leadex VIII Platinum Pro 1000W ATX 3.1 power supply. The 1000W model costs about $77 more than an 850W option. I plan to keep the system for at least five years and probably won't upgrade soon. Is 850W enough for this build, or is it worth keeping the 1000W unit for extra headroom and possible future upgrades?

For the current CPU and GPU, 850W is generally adequate if it’s a reputable ATX 3.1 supply with the proper modern GPU connector. The 1000W model is the more comfortable choice, especially if you might install a higher-end CPU or graphics card later. There’s no meaningful downside to having the extra capacity.
Don’t assume a 1000W PSU automatically wastes more electricity. Your components draw only what they need, and the unit’s efficiency depends on its load. Since this is your first build, choosing the higher-quality 1000W Super Flower model is a sensible, simple option rather than chasing a cheaper unit.
If you already bought the Super Flower unit, I’d keep it. It’s a high-quality, efficient model, and replacing it only makes sense if the price difference is important to your budget. If you haven’t ordered yet, compare the actual prices and quality of the 850W alternatives rather than focusing only on wattage.
You don’t need to downgrade just because the PSU is rated for 1000W. That’s the maximum it can provide, not what it constantly consumes. An 850W unit could run this system at stock settings, but 1000W gives you more headroom for transient spikes and future upgrades.
