I'm in the market for a graphics card upgrade and my budget is around $500. Ideally, I'm looking for something with 16GB of VRAM. The options like the new RTX 5060 and others are a bit overwhelming for me. Could anyone recommend the best choices?

If you can stretch your budget a bit, the 4070 Super is around $550, but it doesn’t have 16GB. The 7800 XT and the 7900 GRE might also be good options if you can find them at a good price.
Your best bets around this price are the 5060 Ti or the RX 7800 XT. Just go for the cheaper option! Both are great.
From what I've gathered, the 5060 Ti offers great value, especially with its 16GB of VRAM, as long as your motherboard has a PCIE 5 slot.
The RTX 5060 Ti can usually be found for about $469 in most places. It's a strong contender if you're wanting NVIDIA.
I recently bought the RX 7800 XT for about 489 euros and it works perfectly for my needs! It's a solid choice.
I've seen mixed reviews about the RX 7800 XT, though. Just wanted to put that out there.
Just a heads up, the 4070 doesn't have 16GB of VRAM, so keep that in mind.
