My current PC has a Ryzen 7 3700X, liquid cooling, 4TB of SSD storage, and 16GB of RAM. I'm looking to replace my GTX 1060 with a card that costs no more than about €400 in Spain. I'm considering options such as the RX 6750 XT or Intel Arc B580, but I'd prefer more than 8GB of VRAM and good streaming performance. What would be the best upgrade for this system and budget?

The Arc B580 is also a reasonable match for the Ryzen 7 3700X and includes more than 8GB of VRAM. If you choose it, make sure the motherboard BIOS and chipset drivers are up to date and enable Resizable BAR, also called Smart Access Memory, for better performance.
Check current local prices before deciding. The RX 9060 XT 16GB and RTX 5060 Ti 16GB are the main newer options to compare, although pricing can vary a lot. Around €484 for the 9060 XT is fairly close to your limit, while the 5060 Ti is usually much more expensive.
If you can stretch the budget by roughly €50, a 16GB RX 9060 XT could be worth considering. It would give you more VRAM and a stronger overall upgrade than most cards around the €400 mark.
A used RTX 3080 might fit the budget and would be a substantial jump from the 1060. Just check its condition, power requirements, cooling, and whether your power supply can handle it. Used prices can be much lower in some regions.
