I'm upgrading a gaming PC that currently uses a Radeon RX 5700 XT and a Ryzen 9 5900X. The graphics card regularly reaches over 100°C, causing crashes, so I'm considering replacing it. My options are an RTX 5060 Ti with 8GB of VRAM for about $379 or a 16GB model for around $579. I use a 1080p 144Hz monitor and mainly play GTA V, Minecraft, Counter-Strike 2, Rust, Rainbow Six Siege, and eventually GTA 6. Is the extra VRAM worth the additional cost, or would another GPU be a better choice?

At 1080p, 8GB can still handle many of those games, but 16GB will give you more breathing room for newer titles and may help the card last longer. That said, the 16GB RTX 5060 Ti is a lot more expensive, so I’d also compare it with the RX 9060 XT 16GB, which may offer better gaming value if you don’t specifically need Nvidia features.
Your Ryzen 9 5900X is still capable, but a faster GPU may not always be fully utilized at 1080p, especially in CPU-heavy games. You can still upgrade the GPU now, but don’t overspend expecting a massive improvement in every title. For your resolution, a reasonably priced 16GB card is probably a better balance than paying a premium for the 5060 Ti 16GB.
The RX 9060 XT 16GB is worth checking out before deciding. It offers strong performance for the price and gives you the extra VRAM without paying as much as some 16GB Nvidia models. For a gaming-focused 1080p build, it could be the better deal.
Before replacing the 5700 XT, make sure the temperature is actually the cause of the crashes. Check the GPU core and hotspot temperatures, clean out dust, inspect the fans, and consider replacing the thermal paste if the card is older. It’s also worth checking whether the power supply is failing or undersized.
