I chose an Intel platform and a motherboard that supports my existing memory because I wanted to avoid buying new RAM. After entering the build into a parts list, though, I realized my current RAM setup may be far from ideal. How much performance could I realistically be losing with this configuration, especially in games and general use?

Mixing the existing sticks may prevent the system from running in proper dual-channel mode, depending on the exact arrangement and capacities. The memory will also generally run at the slowest speed and loosest timings that all of the modules can reliably support. The impact is measurable, but the exact loss depends heavily on the RAM layout and what you use the PC for. Selling the current modules and replacing them with a matched 2x16GB kit would be the cleaner option.
It may be more cost-effective to sell the old memory and buy a fresh DDR4 kit. A matched 32GB kit with two 16GB modules should be relatively affordable and would give the processor a better chance to run at its rated memory speed and in dual channel.

A newer CPU can be held back when the RAM is running in an unusual or mismatched configuration, so checking actual memory-channel operation and benchmark results would give you a better answer than estimating from the parts list alone.
