Can I keep my iPhone and data when leaving someone else’s phone plan?

I'm trying to leave an abusive situation quickly and may need to leave overnight. The iPhone I use is currently paid for through someone else's mobile plan, and I'm not sure which carrier it uses. They've threatened to take the phone or shut off the service, but I need it to look for work and stay connected. If I keep the iPhone and its physical SIM card, can I switch to my own provider without losing my photos, files, apps, or other data? Is it possible to keep the current phone number, and what should I secure before leaving?

Make a fresh backup, change your Apple Account password from a safe device, enable two-factor authentication with contact information only you control, and check the list of devices signed into the account.
