I'm upgrading from an i5-10400F with 16GB of 2333MHz DDR4 and recently installed an RX 9070 XT. I'm deciding between two AM5 builds using the same motherboard: a Ryzen 5 7500F with 2x16GB of DDR5-6000 CL30, or a Ryzen 5 7500X3D with a single 16GB DDR5-6000 CL30 stick, adding a second stick later when memory prices drop or my budget allows. I mainly want the best gaming experience, but I also keep Spotify, Discord, and Opera GX open while playing. Which option makes more sense?

If your only priority is the highest gaming performance right now, the 7500X3D is the faster choice, especially in CPU-heavy games and for improving 1% lows. Adding another memory stick later is much easier than replacing the processor.
Sixteen gigabytes is usable today, even in demanding games, but it’s getting close to the minimum once you add several background applications. If you frequently approach your memory limit, choose the 7500F and 32GB. Otherwise, the 7500X3D with a temporary 16GB setup gives you more gaming performance now, though running one stick may reduce memory bandwidth in some workloads.
The better option depends heavily on your games, resolution, graphics settings, and monitor refresh rate. At 1440p or above, the RX 9070 XT will often be the limiting factor, so the 7500F should perform very well. Competitive or CPU-intensive games at high frame rates are where the X3D chip is more likely to show a noticeable advantage.
I’d choose the 7500F with 32GB. It’s still plenty capable for an RX 9070 XT, and having 32GB in dual-channel mode is more comfortable for modern games plus background apps. You can always upgrade to a stronger X3D processor later when you need more CPU performance.
